Roe is available in various forms such as fresh, frozen, brined, smoked, and canned. In the global market, only the salted roe of approximately 20 species, including sturgeons (Acipenser and Huso) and paddlefish (Polyodon and Psephurus), is recognized as caviar. Roe from fish species other than sturgeons is occasionally labeled as "caviar substitutes." Caviar is categorized into two main types: sturgeon and non-sturgeon. The latter encompasses roes from various fish species such as cod, lumpfish, herring, capelin, salmon, trout, sea-urchin gonads, mullet, and tuna.
